Job Responsibilities
•Manage day-to-day operations of kitchen and coordinate food production and BOH schedules.
•Modify and create new menus based on current food trends and tastes.
•Ensure quality dishes are served quickly while still conforming to recipes and plating standards.
•Ensure all prepared items are labeled, dated, initialed, covered, and rotated. Document waste and spoilage.
•Control food cost by training kitchen employees on proper food preparation, portioning and handling procedures.
•Accountable for kitchen’s inventory.
•Respond well to special orders; correct mistakes quickly; looks to exceed customer expectations at all times.
•Demonstrate to kitchen employees how to properly prepare menu and store food items.
•Ensure the sanitation standards as set forth by the restaurant, local, state and federal regulations. Check and conduct regular inspections of the entire kitchen, dishwashing areas and coolers and promptly act to correct the deficiencies found.
•Recruit, train, evaluate, lead, motivate, coach and discipline all kitchen employees to ensure the restaurant’s culture and core standards are met.
•Accountable for all BOH duties and staff.
Job Requirements and Qualifications
•Must have at least two (2) years of experience as a Head Chef/Executive Chef in a full service restaurant.
•Must be skilled in wok cooking methods and be well versed in Southeast Asian and/or Southern Chinese Cuisine.
•Excellent verbal communication skills in English, Vietnamese or Chinese.
•Strong leadership skills. Ability to organize and delegate work tasks.
•Has a passion for food and strong sense of responsibility.
•Team spirit and great time management.
•Adhere to all Health, OSHA and ADA regulations.
•Passion for exceeding guests’ expectations. Energetic and possesses a can-do attitude.
•Must be flexible to work any and/or all shifts.
